Most towns have small restaurants serving north African and local dishes, including the Malian speciality of la Capitaine Sangha, a Nile perch served with hot chilli sauce, whole fried bananas, and rice. Beef brochettes and fried plantains are sold at street stalls.
Alcohol is available, but most drink the wide range of fruit juices: tamarind and guava juices are particularly delicious. Malian tea is drunk in three varieties, very strong ('as bitter as death'), slightly sweetened ('just like life'), well sugared ('as sweet as love').
