Traditional Kazakh food revolves around horse meat and mutton and as well as various milk products. Among the most popular dishes are:

besbarmak (boiled meat and small pieces of pastry boiled in broth and sprinkled with parsley and coriander)
kazi and chuzhuk (horsemeat sausages)
kuirdak (dish made from roasted sheep's liver, kidney, heart, lungs and fat)
laghman (noodles with a spicy meat sauce)
lepeshka (round, unleavened bread)
shashlyk (skewered, grilled mutton)
plov (mutton, rice and yellow turnip)

Kazakhstani chai (tea) is popular. Beer, vodka, brandy and wines are available, but the speciality is kumis - fermented mare's milk.
